Best Blueberry Banana Muffins
2 cups Bisquick baking mix1 teaspoon baking soda
1/3 cup sugar
1 egg (beaten)
1 teaspoon vanilla
1/4 cup olive oil
3 ripe bananas, mashed
1 cup fresh blueberries
Preheat oven to 375. Grease one 12 cup muffin pan, or line them with paper muffin cups.
Combine beaten egg, mashed bananas, and oil in a bowl.
In a larger bowl combine Bisquick, sugar, and baking soda. Whisk to combine.
Add the wet ingredients to dry ingredients and stir until just combined. Over mixing will result in tough muffins ;)
Gently fold in fresh blueberries.
Divide batter evenly among muffin cups.
Bake 15-18 minutes for large muffins, or until a toothpick comes out clean.
Remove from muffin pans to a wire rack as soon as they can be handled.
I was a bit concerned about the texture and moisture using Bisquick mix for this recipe. My concern proved to be wasted time. The crumb and moisture of the muffins was perfect. Hubby and I each ate them warm and the next day. They retained the moisture, and the texture was the same.
