Chicken Piccata Recipe, Quick and Amazing
Piccata dishes are nothing new. I've eaten both chicken and veal piccata many times, yet never prepared it until now. Ready in just 30 minutes, this Chicken Piccata Recipe is without question one for the recipe box! It was a first for my hubby and his taste buds were overwhelmed with savory delight by this chicken recipe.
Chicken Piccata Recipe
Ingredients
2-4 boneless, skinless chicken breast halves (1 1/2 pound total)2 Tbsp grated Parmesan cheese
1/3 cup flour
Salt and pepper
4 Tbsp olive oil
4 Tbsp butter
1/2 cup chicken stock or dry white wine
3 Tbsp lemon juice
1/4 cup brined capers
1/4 cup fresh chopped parsley
Directions
1 Cut the chicken breast halves horizontally, butterflying them open. If the breast pieces are large, cut through each piece as to fillet. If the pieces are still thick after butterflying, put them between two pieces of plastic wrap and pound them with a meat hammer to 1/4-inch thickness.2 Mix the flour, salt, pepper, and grated Parmesan in a small bowl. Rinse the chicken pieces in water. Dredge them in the flour mixture, until thoroughly coated.
3 Heat olive oil and 2 tablespoons of the butter in a large skillet on medium high heat. Add the chicken pieces, but do not crowd the pan. Cook in batches if necessary. Brown well on each side, about 3 minutes per side. Remove the chicken from the pan and reserve to a baking sheet or oven proof platter. Cook the remaing breasts in the same manner. Cover with aluminum foil and keep warm in the oven while preparing the sauce.
4 Add the chicken stock or white wine (or a combination of both), lemon juice, and capers to the pan. Scrape up the browned bits of goodness on the bottom of the skillet. Cook, reducing the sauce by half. Add in the remaining 2 tablespoons of butter and whisk when melted. Plate the chicken and serve with the sauce poured over the chicken. Sprinkle with parsley, which I didn't have on hand and skipped as you can see.
The photos might not be amazing but let me tell you this chicken was not only tender and juicy but also one of the most flavorful quick dinners ever! The capers and butter together promote a deep, pungent richness that is balanced by the light fresh essence of lemon. Thus the result is a lightweight, robustly fresh sauce scattered with soft texture.
